November 20, 2024 - Walailak University, led by Asst. Prof. Dr. Tanong Aewsiri and university students from the School of Agricultural Technology and Food Industry, in collaboration Asst.Prof. Kitti Chaowana from the School of Languages and General Education and the Center for Academic Services, organized a hands-on workshop to transfer knowledge on processing traditional sweets from Kab-dum Native Rice to the community of Ban Tha Som, Tha Som Subdistrict, Hua Sai District, Nakhon Si Thammarat Province. The workshop focused on utilizing Kab-dum Native Rice, a local variety known for its high nutritional value (High in magnesium, potassium, phosphorus, and zinc, with low sodium content) and colon cancer-preventing properties, as the main ingredient to develop four products: Giant Rice Crispy, Thai Honeycomb Cookies, Crispy Coconut Crepes, and wort. The activity aimed to add value to local rice, promote healthy consumption, and create opportunities for additional income and career development within the community.
The activity attended by community members and organizations such as the Hua Sai District Agricultural Extension Office, the Nakhon Si Thammarat Rice Research Center, and the Administration and Coordination Center for Pak Phanang River Basin Development, with over 30 participants attending. This workshop is part of a project supported by Plant Genetic Conservation Project Under the Royal Initiative of Her Royal Highness Princess Maha Chakri Sirindhorn (RSPG) and t Office of the Royal Development Projects Board (ORDPB), focusing on developing local rice varieties in the Pak Phanang Basin to promote community economics and sustainable resource conservation.
