Walailak University develops “LIGoR Chicken” hybrid breed to support sustainable farming in southern Thailand

Researchers at Walailak University have developed a new hybrid native chicken breed known as “LIGoR Chicken,” designed to combine the distinctive flavor of traditional Thai chickens with faster growth and high nutritional value. The project aims to help farmers in southern Thailand build more stable and sustainable livelihoods while responding to growing consumer interest in healthier food.

The breed was developed through a collaboration between Walailak University, Suranaree University of Technology, and Thailand’s Department of Livestock Development.

The name LIGoR refers to the historic name of Nakhon Si Thammarat and reflects the breed’s key characteristics: Low cholesterol, It’s delicious, and Growth rate.

According to researchers Assistant Professor Dr. Krittika Kabploy from the School of Agricultural Technology and Food Industry and Assistant Professor Dr. Warangkana Kitpipit from the Akkhraratchakumari Veterinary College, the breed was developed by crossbreeding a Surat Thani Red Chicken with a hen line from Suranaree University of Technology. The resulting chicken retains the flavor and character of traditional free-range chickens while achieving a growth rate closer to that of commercial broilers.

LIGoR chickens reach a market-ready weight of 1.5-2 kilograms in about 12 weeks, a production period shorter than that of most native breeds. The meat is known for a distinctive texture - firm yet tender and slightly chewy - which distinguishes it from both conventional native chickens, which can be tough, and broilers, which tend to be softer.

Beyond breed development, the project also focuses on supporting farmers throughout the production chain. Walailak University provides access to chicks, training in low-cost poultry housing systems, and digital platforms designed to connect producers directly with consumers. Community enterprise groups raising LIGoR chickens have since formed in the region, generating income throughout the year.

To introduce the chicken’s distinctive flavor to the public, Walailak University will host a cooking competition during the Walailak University Agriculture Fair 2026. The event, titled “The Charm of Southern Chili Curry with LIGoR Chicken: Authentic Taste of Nakhon Si Thammarat,” invites participants to create innovative versions of this traditional southern Thai dish.

The competition will take place on 15 March 2026 from 1:00 to 4:30 p.m. at the Walailak University Culinary Training Center. The winners will receive cash prizes and certificates.

The Walailak University Agriculture Fair 2026 will be held from 14-23 March 2026 at Walailak University.
